Every year, especially when I’m visiting family and friends, I love whipping up my not-so-famous but indulgent fluffy gin and tonic waffles. Yep, gin and tonic waffles are my go-to treat, making appearances at dinner parties, breakfasts, brunches, or any special occasion. They’re definitely a guilty pleasure, and I don’t always love sharing them 😉
Since it’s that time of year when people gather, I thought I’d share my recipe. It’s the perfect addition to any get-together if you’re looking to try something different.
These fluffy waffles are super simple and incredibly quick to make! You shouldn’t spend more than 12 minutes making a whole plate. Yum! Prepping takes just about 5 minutes, with the hardest part being the 20-minute wait for your dough to rise. 🙂
I’ve started using Shortcross Gin from Ireland, which I discovered on an amazing trip to Dublin. It has a clean and crisp flavor that pairs perfectly with this recipe.
Here’s what you’ll need:
– 1 small packet of active yeast (8–10 grams or 1/4 ounce)
– 3 small teacups of whole or semi-skimmed milk
– 1 generous teaspoon of brown sugar
– 4 small cups of sieved plain flour
– 4 eggs
– 1/2 cup of melted salted butter
– 1 teaspoon of vanilla extract
– 1/2 teaspoon of cinnamon
– A pinch of nutmeg
– 2 shot glasses of gin
– 1/5 cup of tonic
– 1/2 lemon
Once your mixture has risen, get ready to griddle those waffles.
Finish them off with some fresh berries, syrup, cream, or even a tasty gin and tonic!
