We landed in Ibiza right after a fun time wine tasting in Slovenia. To maximize our trip, we took an early morning flight from London to Ibiza. It seemed like a great idea at first, but reality hit when we realized it left us with barely any time to rest, resulting in a very tired arrival.
However, arriving at our beautiful hotel in Ibiza immediately lifted my spirits—it was more effective than a strong cup of coffee! I had been looking forward to this trip for weeks, especially excited to spend my days relaxing under the sun.
After briefly exploring the Migjorn Ibiza, the exhaustion caught up with me, and I ended up taking a long nap. Even after resting, a relaxing spa session, enjoying the sunset, and indulging in tasty Spanish cuisine was all I desired. Although it might not sound like a typical night in Ibiza, after nearly four consecutive days of drinking, it was exactly what I needed!
I extended my spa time as much as I could before venturing out to catch the sunset. Our first destination was Es Vedra, a must-see on the island that I missed last time. You can’t drive all the way unless you’re on a motorcycle, so we parked as close as possible and took a short five to ten-minute walk. Es Vedra was stunning, and it was nice to experience it without the typical summer crowds.
The photo above might look calm, but standing near the edge was quite nerve-wracking for me. I even crawled to get that shot! Heading left made the path less steep, and a bit farther, we stumbled upon some caves.
We lingered at Es Vedra as long as we could but left just before the sun set completely since I was eager for dinner.
We headed back to Sant Josep for dinner at the UNIC Restaurant, conveniently located next to our hotel. Usually, our travels are packed with activities, so it’s refreshing to embrace doing nothing at times. I even opted for the 10-course tasting menu, which was more than I’ve ever had before, and my curiosity was piqued—I was definitely ready for it!
The meal kicked off with brioche with duck rillette and pickle mayonnaise, followed by dishes like foie gras, oysters with pig trotters and shiitake mushrooms, langoustines, and chicken with gnocchi. Everything was accompanied by plenty of fizz, as anyone following on Snapchat would have seen. We continued with red prawn cannelloni and beef sirloin.
One highlight was the pork loin with mango and sweet and sour pears—it disappeared in seconds! Then, we had goat’s cheese with “Malacosta” jelly. Despite feeling quite full, I pushed on for the sake of “research.” If someone knows how to say no to delicious food, please enlighten me!
Dessert featured citrus supremes with olive oil ice cream, which surprisingly tasted great, and a missed-photo opportunity of a white chocolate and passion fruit sphere. I wholeheartedly recommend this place. Every dish was incredible, thanks to the chef’s experience in a Michelin star restaurant in France before setting up here. We’re certainly glad he did!
