Captivating Sunsets Over Es Vedra, Ibiza

We arrived in Ibiza right after enjoying some wine tasting in Slovenia. To make the most of our time, we took an early flight from London, which seemed great at first. However, it also meant we barely got any sleep that night. So, naturally, I was super tired when we finally landed in Ibiza.

Regardless of my exhaustion, the amazing hotel in Ibiza gave me a much-needed energy boost, even more than a strong coffee would. I had been excited about this trip for weeks, eager to enjoy some sun and relaxation.

After a quick look around Migjorn Ibiza, I gave in to my tiredness and took a long nap. Although you’d think the nap would have energized me for the rest of the day, I couldn’t resist a spa session, enjoyed a sunset, and indulged in delicious Spanish food. Not exactly a buzzing Ibiza night, but after four days of partying, I needed it!

I extended my spa time as much as possible before heading out to catch the sunset.

Our first stop was Es Vedra, one of the island’s most iconic spots. I missed it on my previous visit, so I insisted we go there first. To reach it, you have to park nearby and walk about 5-10 minutes, unless you’re on a motorcycle.

Es Vedra was just as breathtaking as everyone says, with dramatic cliffs that add to its charm. It can get crowded in the summer, so I was pleased to see it without the usual hustle.

The photos I took might look calm, but they don’t show how nervous I was sitting so close to the edge. I crawled to get the shot, that’s how scared I was!

If you go left, the terrain becomes less steep, and the more you explore, the more you might stumble upon caves some people seem to be living in.

We stayed until just before the sun dipped below the horizon, then it was time for dinner, which I couldn’t wait for!

Dinner was at UNIC Restaurant in San Josep, close to our hotel—perfect given my lazy mood. Typically, vacations are packed from sunrise to sunset, so I am starting to really enjoy moments of pure relaxation.

I opted for their 10-course tasting menu. Although I have never gone beyond seven courses, my curiosity and hunger spurred me on.

We kicked off with a brioche with duck rillette and pickle mayonnaise, followed by foie gras, and then oysters with pig trotters and shiitake mushrooms. Each course was better than the last. By then, I was excited about choosing the 10 courses.

We continued with langoustines and chicken with gnocchi in a tasty broth, complemented by lots of fizz (which, if you followed me on Snapchat, you’d know all about), followed by red prawn cannelloni and beef sirloin with ashes tataki.

My absolute favorite was the pork loin with mango and sweet-and-sour pears, which I devoured instantly.

We moved on to goat cheese and “Malacosta” jelly. Although I started feeling full, I powered through in the name of research (okay, maybe greed). If there’s a way to say no to good food, please let me know.

Dessert was citrus supremes with olive oil ice cream—odd-sounding, but surprisingly tasty, followed by a white chocolate and passion fruit sphere. I forgot to take a picture of this one—oops!

I highly recommend this restaurant. Everything was delicious; the chef previously worked at a Michelin-starred restaurant in France before coming here, and we’re so glad he did!
